- 1 pound ground beef
- 1 cup rice (white or brown)
- 1 can cream of mushroom soup
- 1 cup cheese (e.g., cheddar)
- 1 onion, chopped
- 2 cups beef broth
- Salt and pepper to taste
- Optional: green beans or mixed vegetables
Instructions
- Preheat your oven to 350°F (175°C).
- Sauté the ground beef in a large skillet over medium heat until browned, about 5–7 minutes. Add in the chopped onion and cook until softened, roughly 5 minutes. Drain excess fat.
- Combine the cooked beef and onion with rice, cream of mushroom soup, beef broth, cheese, and any optional vegetables in a large mixing bowl. Stir until well incorporated.
- Season the mixture with salt and pepper.
- Pour the mixture into a greased casserole dish and spread it out evenly.
- Cover the dish loosely with foil and bake for 30-35 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
- Allow the casserole to cool for a few minutes before serving.
Notes
This casserole can be made ahead of time and stored in the fridge. Experiment with spices for added flavor.
