Description

Cozy homemade potato bread rolls with a moist, tender texture and a subtly sweet flavor, perfect for any meal.

Ingredients

Scale
  • 2 cups mashed potatoes
  • 1/2 cup milk, warmed
  • 1/4 cup butter, melted
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 egg (optional, for egg wash)

Instructions

  1. Mix the base: In a large mixing bowl, combine your creamy mashed potatoes with warmed milk, melted butter, sugar, and salt until the mixture is smooth and inviting.
  2. Develop the yeast: Sprinkle active dry yeast over this mixture and allow it to bloom for about 5 minutes.
  3. Create the dough: Gradually incorporate the flour into the mixture until a soft dough forms.
  4. Knead the dough: Transfer to a floured surface and knead for 5-7 minutes until smooth and elastic.
  5. Let it rise: Place in a greased bowl, cover with a kitchen towel, and let it rise for about an hour until doubled in size.
  6. Shape the rolls: Punch down the dough and shape into golf ball-sized rolls.
  7. Second rise: Arrange on a parchment-lined baking sheet, cover, and let rise for another 30 minutes.
  8. Preheat the oven to 375°F (190°C) and brush the tops with a beaten egg (if using).
  9. Bake: Place the rolls in the oven and bake for 20-25 minutes until golden brown.

Notes

These rolls can be made ahead and refrigerated. Enjoy them with soups, gravies, or as a side dish.
