Description

Creamy and flavorful refried beans made quickly in an Instant Pot, perfect as a side dish or filling for burritos and tacos.


Ingredients

Scale
  • 1 cup dried pinto beans
  • 4 cups water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt to taste
  • Optional: chili powder, lime juice, fresh cilantro

Instructions

  1. Rinse and sort the dried pinto beans under cold water, discarding any debris or damaged beans.
  2. Combine ingredients in the Instant Pot: rinsed beans, water, onion, garlic, and cumin; stir gently.
  3. Seal the lid and set the Instant Pot to high pressure; cook for 35 minutes.
  4. Release the pressure naturally for 10-15 minutes to absorb flavors.
  5. Mash the beans with a potato masher or immersion blender to your desired texture.
  6. Season with salt and mix in optional chili powder and lime juice if desired.
  7. Garnish with chopped cilantro before serving.

Notes

Store leftovers in an airtight container for up to a week in the fridge or freeze for up to 3 months. Reheat gently on the stove or in the microwave.
