  • 2 tablespoons jerk seasoning
  • 1/2 cup breadcrumbs

  • 1 tablespoon vegetable oil
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons curry powder
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Chopped cilantro for garnish

Instructions

  1. Prepare the Mixture: In a large mixing bowl, combine the ground meat, jerk seasoning, breadcrumbs, egg, green onions, salt, and pepper. Mix generously until well integrated.
  2. Shape the Meatballs: Form the mixture into one-inch meatballs.
  3. Brown the Meatballs: Heat the vegetable oil in a skillet over medium heat. Sear the meatballs for 7-10 minutes until golden brown.
  4. Create the Sauce: In a pot, whisk together coconut milk, curry powder, soy sauce, and brown sugar until smooth. Heat until it simmers gently.
  5. Simmer the Meatballs: Add the browned meatballs to the simmering sauce and cook on low for 15-20 minutes.
  6. Serve and Garnish: Dish out warm meatballs with sauce and sprinkle with fresh cilantro. Enjoy with rice or naan.
