A comforting Texan classic featuring layers of shredded chicken, zesty sauce, crispy tortillas, and melted cheese.

- 1 pound chicken, cooked and shredded
- 10 corn tortillas, cut into strips
- 1 can cream of chicken soup
- 1 can diced tomatoes with green chilies
- 1 cup salsa
- 1 cup sour cream
- 2 cups shredded cheese (cheddar or a Mexican blend)
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, cream of chicken soup, diced tomatoes, salsa, sour cream, chopped onion, chopped bell pepper, garlic powder, salt, and pepper in a large bowl.
- Layer half of the tortilla strips in a greased 9×13 inch baking dish.
- Top with half of the chicken mixture followed by half of the cheese.
- Repeat the layers with the remaining tortilla strips, chicken mixture, and cheese.
- Bake for 30-35 minutes until the cheese is melted and bubbly.
- Allow the casserole to cool a few minutes before serving.
Notes
Make-ahead option available. Can substitute turkey for chicken or use roasted vegetables for a vegetarian version.
