- 1 cup breadcrumbs
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 cup enchilada sauce
- 1 cup diced tomatoes
- 1 avocado, diced
- Lime juice
- Fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C).
- Combine ingredients: In a large mixing bowl, mix ground beef, breadcrumbs, egg, garlic, cumin, chili powder, salt, and pepper until just combined.
- Form meatballs: Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a parchment-lined baking sheet.
- Bake the meatballs for 20-25 minutes, or until they reach an internal temperature of 160°F (71°C).
- Heat the enchilada sauce in a saucepan over medium heat.
- Coat the meatballs in the sauce for a few more minutes.
- Prepare the salad by combining diced tomatoes and avocado with lime juice, salt, and pepper.
- Serve the meatballs hot, garnished with cilantro, alongside the salad.
Notes
