Description

Delicious Mexican Beef Meatballs enveloped in a rich enchilada sauce, perfect for family dinners or gatherings.


Ingredients

  • 1 pound ground beef
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup enchilada sauce
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • Lime juice
  • Fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ingredients: In a large mixing bowl, mix ground beef, breadcrumbs, egg, garlic, cumin, chili powder, salt, and pepper until just combined.
  3. Form meatballs: Shape the mixture into meatballs, about 1 to 1.5 inches in diameter, and place them on a parchment-lined baking sheet.
  4. Bake the meatballs for 20-25 minutes, or until they reach an internal temperature of 160°F (71°C).
  5. Heat the enchilada sauce in a saucepan over medium heat.
  6. Coat the meatballs in the sauce for a few more minutes.
  7. Prepare the salad by combining diced tomatoes and avocado with lime juice, salt, and pepper.
  8. Serve the meatballs hot, garnished with cilantro, alongside the salad.

Notes

Make-ahead by assembling in advance and refrigerating. Substitute ground turkey or add cheese for variety.
