Description

Ingredients

  • 1 can black beans, drained and rinsed
  • 1 pound sausage (chicken, pork, or beef)
  • 2 cups chicken broth
  • 1 diced bell pepper
  • 1 diced onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Sauté the diced onion and bell pepper for 3-4 minutes until softened.
  3. Cook the sausage, breaking it up with a wooden spoon, until browned, about 5-7 minutes.
  4. Incorporate the rice and rinsed black beans, stirring to mix.
  5. Add the chicken broth, cumin, chili powder, salt, and pepper; stir to combine.
  6. Bring to a gentle boil, then cover and reduce heat to a simmer for 15 minutes.
