- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground ginger
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in a medium bowl.
- Cream together the softened butter and granulated sugar until light and fluffy, about 3–5 minutes.
- Add the eggs one by one, mixing well after each addition. Stir in the vanilla extract.
- Gradually add the flour mixture alternately with the buttermilk, starting and ending with the flour mixture.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool in the pans for 10 minutes before transferring to wire racks.
- Beat together cream cheese, softened butter, and vanilla for frosting until smooth; gradually add powdered sugar.
- Frost the cooled cake layers generously and serve.
Notes
Make sure your butter and eggs are at room temperature for better emulsification. You can substitute buttermilk with plain yogurt or milk mixed with lemon juice if needed.
