Description

Ingredients

  • 2 lbs Pork Shoulder
  • 8 Soft Corn Tortillas
  • 1 cup Diced Onions
  • 1/2 cup Fresh Cilantro
  • 1/4 cup Lime Juice
  • 1 cup Salsa (Verde or Roja)
  • 1 cup Pineapple (Optional)
  • 1 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Chili Powder
  • 1 tsp Oregano
  • 1 tsp Salt

Instructions

  1. Marinate the Pork: In a large mixing bowl, combine the pork shoulder with cumin, paprika, chili powder, lime juice, and salt. Make sure the meat is well-coated and marinate for at least 2 hours, ideally overnight.
  2. Grill the Pork: Preheat your grill to medium-high and cook the marinated pork for 15-20 minutes per side until caramelized and the internal temperature reaches 145°F.
  3. Let it Rest: Remove the pork from the grill and let it rest for about 10 minutes to retain juiciness.
  4. Slice the Pork: Use a sharp knife to slice the pork into small bite-sized pieces.
  5. Warm the Tortillas: Heat corn tortillas on the grill or stovetop for 20-30 seconds per side until warm.
  6. Assemble the Tacos: On each tortilla, place sliced pork, diced onions, and cilantro. Add salsa if desired.
  7. Serve & Enjoy: Serve immediately with lime wedges on the side.

Notes
