- 1 Cup Coconut Rum
- 1 ½ Cups All-Purpose Flour
- 10 oz Sweetened Coconut Flakes
- 2 Large Eggs
- ½ Cup Coconut Milk
- Vegetable Oil for Frying
- 4 oz Cream Cheese
- ½ Cup Powdered Sugar
Instructions
- Soak the pineapple by immersing the rings in dark and coconut rum for at least an hour.
- Set up your breading station with flour, egg mixture, and coconut flakes in three shallow bowls.
- Coat each ring in the flour, dip in the egg mixture, and roll in coconut flakes.
- Heat vegetable oil to 350°F (175°C) in a deep fryer or heavy pot.
- Fry the rings for about one minute on each side until golden brown.
- Prepare the dipping sauce by blending cream cheese and powdered sugar, adding a splash of rum.
- Serve the fried pineapple warm with the dipping sauce.
