Description

Ingredients

  • 8 Pineapple Rings
  • 1 Cup Dark Rum
  • 1 Cup Coconut Rum
  • 1 ½ Cups All-Purpose Flour
  • 10 oz Sweetened Coconut Flakes
  • 2 Large Eggs
  • ½ Cup Coconut Milk
  • Vegetable Oil for Frying
  • 4 oz Cream Cheese
  • ½ Cup Powdered Sugar

Instructions

  1. Soak the pineapple by immersing the rings in dark and coconut rum for at least an hour.
  2. Set up your breading station with flour, egg mixture, and coconut flakes in three shallow bowls.
  3. Coat each ring in the flour, dip in the egg mixture, and roll in coconut flakes.
  4. Heat vegetable oil to 350°F (175°C) in a deep fryer or heavy pot.
  5. Fry the rings for about one minute on each side until golden brown.
  6. Prepare the dipping sauce by blending cream cheese and powdered sugar, adding a splash of rum.
  7. Serve the fried pineapple warm with the dipping sauce.
