Description

A luxurious carrot cake layered with rich cream cheese frosting and drizzled with salted caramel, perfect for any celebration.


Ingredients

  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 cups grated carrots
  • 1 cup salted caramel sauce
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a mixing bowl.
  3. Beat the eggs with granulated and brown sugar until light and fluffy.
  4. Add the dry ingredients to the wet mixture, stirring gently until just combined.
  5. Fold in the grated carrots and salted caramel sauce until evenly mixed.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  8. Cool in the pans for 10 minutes before transferring to a wire rack.
  9. Beat cream cheese and unsalted butter until smooth, then add powdered sugar and vanilla extract until fluffy.
  10. Frost the cooled cakes between layers and on top, then drizzle with salted caramel sauce.

Notes

For a healthier twist, swap half of the vegetable oil for applesauce. Ensure the cakes are completely cool before frosting to prevent melting.
