Instructions
- Preheat the oven to 350°F (175°C) and grease two 9-inch round cake pans.
- Whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a mixing bowl.
- Beat the eggs with granulated and brown sugar until light and fluffy.
- Add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fold in the grated carrots and salted caramel sauce until evenly mixed.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean.
- Cool in the pans for 10 minutes before transferring to a wire rack.
- Beat cream cheese and unsalted butter until smooth, then add powdered sugar and vanilla extract until fluffy.
- Frost the cooled cakes between layers and on top, then drizzle with salted caramel sauce.
Notes
For a healthier twist, swap half of the vegetable oil for applesauce. Ensure the cakes are completely cool before frosting to prevent melting.
