Description

Ingredients

  • 2 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • 1/2 cup pico de gallo
  • Fresh cilantro for garnish

Instructions

  1. Combine Ingredients: In your high-powered blender or food processor, add the drained chickpeas, tahini, olive oil, fresh lime juice, ground cumin, garlic powder, and a little salt. Pulse to combine.
  2. Adjust Consistency: If your hummus feels too thick, add a splash of water or another tablespoon of olive oil until it reaches the desired consistency.
  3. Fold in the Pico de Gallo: Gently incorporate the pico de gallo using a spatula, maintaining chunks for bursts of flavor.
  4. Chill: Transfer the hummus to a serving bowl, garnish with cilantro, and chill for at least 30 minutes before serving.
