- 8 oz spaghetti
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 bell pepper, chopped
- 1 cup corn
- 1 packet taco seasoning
- 1 cup sour cream
- 1 cup shredded cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C). Grease the baking dish.
- Cook the spaghetti in a large pot of salted boiling water for 8-10 minutes until al dente. Drain and set aside.
- Brown the ground beef in a skillet over medium heat for 5-7 minutes. Drain excess fat.
- Add bell pepper, corn, and taco seasoning to the skillet, cooking for an additional 5 minutes.
- Combine the cooked spaghetti, beef mixture, black beans, sour cream, and half of the shredded cheese in a large mixing bowl.
- Transfer the mixture to the greased baking dish, spreading it evenly. Top with remaining cheese.
- Bake for 20-25 minutes until cheese is melted and golden brown. Let sit before serving.
