Description

Ingredients

  • 2 lbs Pork Shoulder
  • 12 Corn or Flour Tortillas
  • 1 Onion, chopped
  • 1/2 cup Cilantro, chopped
  • Juice of 2 Limes
  • 1 cup Salsa of your choice
  • 1 cup Pineapple, diced
  • 3 tbsp Achiote Paste
  • 4 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Oregano
  • Salt and Pepper to taste

Instructions

  1. Marinate the pork: In a mixing bowl, combine achiote paste, minced garlic, cumin, oregano, salt, and pepper. Coat the pork shoulder thoroughly with this aromatic mixture.
  2. Cover and refrigerate your marinated pork for at least two hours or overnight to deepen flavors.
  3. Preheat your grill or oven to medium-high heat. Grill the marinated pork for about 20-25 minutes, flipping for even char or roast in the oven for 45-60 minutes.
  4. Let the pork rest for a few minutes, then slice thinly.
  5. Warm your tortillas on the grill or in a skillet until soft.
  6. Assemble your tacos: Place the sliced pork in each tortilla and top with chopped onions, cilantro, lime juice, and salsa.
