- 2 lbs Pork Shoulder
- 12 Corn or Flour Tortillas
- 1 Onion, chopped
- 1/2 cup Cilantro, chopped
- Juice of 2 Limes
- 1 cup Salsa of your choice
- 1 cup Pineapple, diced
- 3 tbsp Achiote Paste
- 4 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Oregano
- Salt and Pepper to taste
Instructions
- Marinate the pork: In a mixing bowl, combine achiote paste, minced garlic, cumin, oregano, salt, and pepper. Coat the pork shoulder thoroughly with this aromatic mixture.
- Cover and refrigerate your marinated pork for at least two hours or overnight to deepen flavors.
- Preheat your grill or oven to medium-high heat. Grill the marinated pork for about 20-25 minutes, flipping for even char or roast in the oven for 45-60 minutes.
- Let the pork rest for a few minutes, then slice thinly.
- Warm your tortillas on the grill or in a skillet until soft.
- Assemble your tacos: Place the sliced pork in each tortilla and top with chopped onions, cilantro, lime juice, and salsa.
