Description

A whimsical banana bread with vibrant pastel colors and a creamy glaze, perfect for celebrations and cheerful brunches.


Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 beaten egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • Pastel food coloring
  • Rainbow sprinkles
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (or dairy-free alternative)
  • 1 teaspoon vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×5 inch loaf pan.
  2. Combine the mashed bananas and melted butter until smooth.
  3. Stir in the sugar, then add the beaten egg and vanilla extract until fully blended.
  4. Add baking soda and salt, blending thoroughly.
  5. Gradually fold in the flour without over-mixing.
  6. Divide the batter into multiple bowls and mix in pastel food colors.
  7. Spoon the colored batters into the loaf pan in layers, swirling lightly.
  8. Bake for about 60 minutes, or until a toothpick inserted comes out clean.
  9. Cool for 10 minutes before transferring to a cooling rack.
  10. Whisk together powdered sugar, milk, and vanilla until smooth and drizzle over the loaf, then sprinkle with rainbow sprinkles.

Notes

You can prepare the batter a day in advance and store it in the refrigerator. Use an air fryer for faster baking.
