A comforting dish featuring tender ground meat, sautéed vegetables, and vibrant spices, all brought together in halved bell peppers.
Ingredients

- 3–4 Bell Peppers (red, green, yellow, or orange)
- 1 lb Ground Beef or Turkey
- 1 Onion (chopped)
- 2–3 cloves Garlic (minced)
- 1 can Diced Tomatoes
- 1 cup Cooked Rice (optional)
- 1 tsp Italian Seasoning
- Salt and Pepper to taste
- 1 cup Cheese (mozzarella or cheddar, optional)
- Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the bell peppers in half lengthwise, discarding the seeds and stems.
- Place them cut-side up in a baking dish.
- Heat a splash of olive oil in a skillet over medium heat.
- Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-5 minutes.
- Add the ground beef or turkey and cook until browned, about 7-10 minutes.
- Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for about 5 minutes.
- If using rice, mix it in.
- Fill each bell pepper half with the meat mixture.
- Cover with foil and bake for 25-30 minutes.
- Remove the foil and sprinkle cheese on top if desired. Bake for an additional 5-10 minutes.
- Serve hot, garnished with fresh herbs.
Notes
Make ahead by preparing the filling in advance. Adjust baking time if using an air fryer.
