Description

A comforting dish featuring tender ground meat, sautéed vegetables, and vibrant spices, all brought together in halved bell peppers.


Ingredients

  • 34 Bell Peppers (red, green, yellow, or orange)
  • 1 lb Ground Beef or Turkey
  • 1 Onion (chopped)
  • 23 cloves Garlic (minced)
  • 1 can Diced Tomatoes
  • 1 cup Cooked Rice (optional)
  • 1 tsp Italian Seasoning
  • Salt and Pepper to taste
  • 1 cup Cheese (mozzarella or cheddar, optional)
  • Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the bell peppers in half lengthwise, discarding the seeds and stems.
  3. Place them cut-side up in a baking dish.
  4. Heat a splash of olive oil in a skillet over medium heat.
  5. Sauté the chopped onion and minced garlic until fragrant and translucent, about 3-5 minutes.
  6. Add the ground beef or turkey and cook until browned, about 7-10 minutes.
  7. Stir in the diced tomatoes, Italian seasoning, salt, and pepper. Let simmer for about 5 minutes.
  8. If using rice, mix it in.
  9. Fill each bell pepper half with the meat mixture.
  10. Cover with foil and bake for 25-30 minutes.
  11. Remove the foil and sprinkle cheese on top if desired. Bake for an additional 5-10 minutes.
  12. Serve hot, garnished with fresh herbs.

Notes

Make ahead by preparing the filling in advance. Adjust baking time if using an air fryer.
